Roasted Leg of Lamb

Ingredients

  • Leg of lamb
  • tablespoon of garlic powder
  • 2 tablespoon of olive oil
  • 1 1/2 teaspoon of salt

Instructions

  • preheat oven to 325 F
  • using fingers rub oil & garlic over lamb
  • sprinkle evenly with salt
  • place on rack in in centre of oven
  • in covered cast iron roasting pan
  • roast in centre of oven for 2 hours
  • or until meat thermometer reads 140 F
  • remover from oven
  • let rest for 15 minutes and serve
